Goat Cheese Dumplings


  • Goat cheese
  • 13 Whole eggs
  • 14 Yolks
  • 8C. All purpose flour
  • 12C. Grated Parmesan cheese
  • Pinch of salt and pepper
  • Pinch of nutmeg
  • Pinch of cayenne pepper


In a mixer with paddle, mix the goat cheese and all of the eggs until incorporated smooth. Add in the Parmesan cheese, salt and peper, nutmeg, cayenne pepper and flour. Ensure that you add in the flour last. Incorporate just until dough comes together Rest dough for 15 minutes in your refrigerator. With an small ice cream scoop or spoon, drop dough into boiling water. Leave dough in the water until the dumplings float. Remove dumplings and finish with sauce and paprika oil.
