Goat Cheese Dumplings

Ingredients:

  • Goat cheese
  • 13 Whole eggs
  • 14 Yolks
  • 8C. All purpose flour
  • 12C. Grated Parmesan cheese
  • Pinch of salt and pepper
  • Pinch of nutmeg
  • Pinch of cayenne pepper

Instructions:

In a mixer with paddle, mix the goat cheese and all of the eggs until incorporated smooth. Add in the Parmesan cheese, salt and peper, nutmeg, cayenne pepper and flour. Ensure that you add in the flour last. Incorporate just until dough comes together Rest dough for 15 minutes in your refrigerator. With an small ice cream scoop or spoon, drop dough into boiling water. Leave dough in the water until the dumplings float. Remove dumplings and finish with sauce and paprika oil.

Ingredients:

  • 2lbs Fresh mushrooms (Morels, Shittake, Enoki, Oyster, Eringi)
  • 1/4lb. Butter
  • 2C. Madeira wine
  • 2C. Chicken stock
  • 2 Whole shallots, chopped
  • 1C. Cream
    Salt and pepper to taste
  • 1C. Whipped cream
    Chives and tomato concase to garnish

Instructions:

Saute mushrooms in butter and shallots until soft. Deglaze the pan with the Madeira wine, bring to a boil and reduce by a half, then add the chicken stock. Reduce the stock by a half and then in cream. Reduce the sauce by a half again, then add salt and pepper to taste. Add in whipped cream, chives and tomato at the end to garnish.
